Potential large customer - help

Hey! So we just had an in-person meeting w/ a large business interested in an AI audit with us, and they want implementations too, but they aren't sold on the fact that we are professionals that reaally knows this stuff (I do).

So we are creating a demo for an E-mail support agent and sending that over. But (1)how much do you show and explain so you show your expertise but don't give away the "sauce"?

(2)And how much do you usually charge for a service like an E-mail agent for example? They have 600 clients (B2B), and have a large support team, yes the value is crazy - BUT they already have a few guys in the business working on getting better with AI. So we need to price ourselves and justify ourselves enough for them not to just wait for the internal members to become proficient enough to do it themselves.
