Diet-PI: A Lightweight Distro for your SBC or VM
I've been using Diet-pi for a all in one distro for both SBC and as a VM to run a variety of applications that come built-in. here is the link to the website and the features list:

i use this image as a basis running on a couple dell 3040 wyse thin clients:
