After years of baking I had to switch things up. I found out I had celiac disease in 2017 and I felt like my whole world did a 180.
Baking as I knew it felt new and challenging. Working with flour that has a hard time rising and a hard time creating the right texture. It’s a battle that I then just began to learn about.
Gluten free baking is so much more about texture than just flour. It’s a science that has taken years of trial and error to perfect recipes. Now these recipe are addicting and delicious and so simple to make.
