I keep failing. Help!!
SOMEONE PLEASE HELP ME!!!! I have only successfully made 3 batches of macarons out of a large bag of almond flour. This last Wednesday I made a batch and they came out perfect. Then on Friday it was a total baking fail day! The cracked, dome'd, tilted and some busted out the side. I used this recipe which was working for me: 145g almond flour, 110 sugar, 110 powdered sugar, 3 egg whites, and tartar. I whipped it up to stiff peaks, got a lava flow, per recipe preheated to 350 then once put into the oven drop the heat to 325, bake 7-8mins, turn and bake for 6. The bottoms were not baked enough and slightly pulled but they were soft on the inside and not chewy, which is something I battled with when I first started. I need all the advice possible. Thank you in advance.
