Welcoming myself

Hi there - currently signed a year lease for my dream coffee shop and me and my wife are in the renovation stages ! We feel our location is perfect - outside one the business areas which aids thousands of workers being one of the biggest naval companies! My worry however is getting the coffee standard correct ! The right bean . The right set up and right stock etc. focusing on the more healthier services too such as protein options , fruit etc. any advice please ?
