The DJF & Fam x ChatJPT Signature Smoked Double-Cheese Jalapeño

🧾 Ingredients
🌶️ Base
6 large jalapeños (halved lengthwise, seeds removed)
12 slices thin-cut bacon (important)
🧀 Decadent stuffing
250 g cream cheese (room temperature)
1 cup smoked mozzarella, shredded
½ cup smoked blue cheese (Fourme d’Ambert for a bold kick)
2 tbsp chopped green onions
1 tbsp onion confit
½ tsp black pepper
½ tsp Québec Kansas BBQ spices (sweet & savory)
🔪 Preparation (important)
Cut the jalapeños in half lengthwise
Remove all the seeds
Blanch for 3 minutes in boiling water, then 3 minutes in ice water; pat dry well
Mix all the stuffing ingredients until smooth but still slightly textured
🧱 Assembly
Generously fill each jalapeño half 👉 it should overflow a bit
Gently press closed with your fingers
Wrap 1 to 2 slices of bacon around each
Secure with a toothpick
🔥 Smoking
Place the poppers on the grate, seam side up
Smoke at 275°F
75 minutes without opening the smoker
