This is something you can make so many variations of! Also definitely a win if you're someone who prefers to meal prep. I would suggest batch prepping this meal- cook and store the quinoa, the turkey, and the veggies, and then when you're packing your lunch, that's when you'd combine them all. I feel like this keeps it fresher! Ground turkey is a great alternative to beef (although red meat is still important) every now and then because there's less saturated fat (making your heart happy)!
