The best high protein banana bread I've ever had! (with choco chips!)
High-Protein Seitan Banana Bread w/ (or without) chocolate chips. A dense, high-protein, minimally sweetened vegan banana bread designed for performance and meal prep. Sweetness from natural dates provides that next level, superfood performance foods to fuel you through those powerful workouts!!! This is my own personal recipe I've been developing for over a year! I'm sure it is not fully finished, but as of right now, it makes pretty damn good, high protein banana bread! P.S. I’m all about consistency and flavor, so these muffins are higher in calories and carbs than your typical banana bread. That said, the texture and taste are usually superior to most high-protein banana breads that rely only on vital wheat gluten and mashed bananas. 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 Dry Ingredients - 200 g vital wheat gluten - 40 g oats, blended into flour - 1 tsp salt - ½ tsp baking soda - ½ tsp baking powder - 1 tsp cinnamon or pumpkin spice Wet Ingredients - 442 g ripe bananas (≈ 4 large bananas) - About 300 g Medjool dates (≈ 12 - 15 large. I use 15 dates personally.), pitted and soaked in hot water for 5 minutes, drained. - If you have a high speed blender, you can skip soaking the dates. - ¾ cup soy milk - (Optional: vanilla extract or a dash of maple if you want more sweetness) 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 𝗣𝗿𝗲𝗽𝗮𝗿𝗲 𝘁𝗵𝗲 𝗗𝗮𝘁𝗲 𝗠𝗶𝗹𝗸 (𝗯𝗹𝗲𝗻𝗱 𝗼𝗮𝘁𝘀 𝗳𝗶𝗿𝘀𝘁 𝗶𝗳 𝘂𝘀𝗶𝗻𝗴 𝘁𝗵𝗲 𝘀𝗮𝗺𝗲 𝗯𝗹𝗲𝗻𝗱𝗲𝗿) 1. If you’re using the same blender, blend the oats first to make oat flour. Add the oat flour to your dry ingredients, then use the blender again to prepare your wet ingredients.   2. If you’re using a high-speed blender, you can skip soaking the dates. However, if your dates are hard or dry, I recommend soaking them first to help soften them.   3. Remove pits from dates and soak pitted dates in hot water for 5 minutes.  4. Drain completely. 5. Blend the softened dates and bananas with ¾ cup soy milk until fully smooth. 𝗠𝗶𝘅 𝘁𝗵𝗲 𝗗𝗿𝘆 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 1. Blend 40 g oats into a fine flour. 2. In a large bowl, combine: 3. Stir well to distribute leavening evenly.
@Miriam Schiro I used rolled oats! Any should work (maybe not the steel cut). I blended them first into a powder and add them all to my dry ingredients before adding the wet ingredients to the blender

Apples with PB peanut butter powder! This same portion of normal peanut butter would be 720 calories! This PB powder with added water is 220 calories, 25g protein!

I love tracking, because it means I can eat anything I want!!! 🙌🏼 Total food freedom. Yes, as long as you stay within your designated calories. Sometimes I have a lighter lunch or breakfast just so I can have a huge dinner. Or so that I can sneak in a giant vegan chocolate cupcake, and still hit my calorie goals! Also, just a reminder too. If counting calories is burning you out or stressing you out too much, it is totally fine to have a maintenance day every once and awhile! As in, eating the exact calories where you don't necessarily gain weight, but you don't lose any either. I usually have 1 maintenance day a week. Over time, consistency is what is going to get you to your goals 🙌🏼 Best of luck!

I got fired from my job this morning.. so I hope that all of you will have the best day ever. That’s it for now… pray for me.
@Kian Mokhtarian I moved 2000 miles for a job. Bought a house and everything. I was laid off 2 months later. I was scared as hell not knowing how I was going to support my family, pay rent, etc. I even hit the bottle pretty hard the first month after losing my job. I had no support system because we moved 2000 miles away from friends and family. I eventually got a new job within a few weeks, but after my first paycheck, I realized I couldn't afford to work there. The pay was nowhere close to what I used to make. At that point, I submitted so many applications. I ALMOST accepted a door to door window salesmen job that paid 100k a year (because you worked 90+ hours a week, no joke. So obviously you would make 100k). I finally sat outside and simply told the universe I just want to be happy. I don't want to sacrifice my time and energy for another job that drains my life force. Sure enough, one of the applications I submitted reached back out. Landed the job and it payed better than my previous job, working less hours. This was all in the span of 3 months. So I guess what I'm trying to say is stay calm. I know exactly how you might be feeling. It is some pretty heavy stuff to process at first, especially if your rent and home are at risk due to not having financial income. But trust the process and put your best self out there and I am sure your path will find you something even better with time. I also met @John Thomas Vegan Squad Coach about 2 months after landing my new job via Instagram as I had also decided to get my shit together (50+ lbs overweight drinking alcohol daily). That same year I lost the 50 lbs and quit drinking alcohol, which inspired me to go back to school and eventually get my own coaching LLC a year later. So in my case, this dark time did have a light at the end of the tunnel. I'm sure there are bigger and better things out there waiting for you. And just remember, this too shall pass.
