Just finished an 18:44 minute Pilates workout to start my morning โ€” and honestly, it was exactly what I needed. ๐Ÿง˜โ€โ™€๏ธ๐Ÿ’ซ Some mornings I donโ€™t have a full hour, but showing up even for 20 minutes always shifts my energy. My core feels activated, my mindโ€™s clear, and Iโ€™m reminded that consistency matters more than perfection. ๐ŸŒธ Pilates has been helping me slow down, breathe deeper, and move with intention โ€” itโ€™s become my little reset before the day starts. Tonight dinner is chicken and chorizo
Struggling to think of a quick one pan meal ? Well tonight I cooked up a colorful, flavour-packed bowl that felt both comforting and fiery. Tender chicken and smoky chorizo were roasted together with sweet potato, red bell pepper, and red onion until everything turned golden and caramelised. A sprinkle of spring onion added freshness on top. Smoked paprika and chillies gave it a warm, spicy kick, while a spoonful of raw honey melted through the dish, bringing just the right hint of sweetness to balance the heat finished off with a sprinkle of sesame seeds ๐Ÿ˜‹ This was full of flavour with a slight kick it was delicious ๐Ÿ‘Œ๐Ÿพ Want more meal inspo? Tonightโ€™s Dinner: Katsu Stir-Fry ๐Ÿฒ
๐Ÿ›’ What Youโ€™ll Need For the stir-fry: โœจ 2 chicken breasts (fried + sliced) โœจ 1 onion (sliced) โœจ A handful of spring onions (chopped) โœจ Noodles of choice For the homemade katsu sauce: ๐Ÿฅ• 1 onion (finely chopped) ๐Ÿฅ• 2 garlic cloves (minced) ๐Ÿฅ• 1 medium carrot (grated or chopped) ๐Ÿฅ„ 1 tbsp curry powder ๐Ÿฅ„ 1 tbsp plain flour ๐Ÿฅ„ 300ml chicken stock ๐Ÿฅ„ 1 tbsp soy sauce ๐Ÿฅ„ 1 tbsp honey (or sugar) ๐Ÿฅ„ 1 tsp garam masala (optional) ๐Ÿฅ„ 1 tbsp oil ๐Ÿ‘ฉโ€๐Ÿณ How To Make It 1๏ธโƒฃ Fry chicken until golden, slice, set aside. 2๏ธโƒฃ In a pan, cook onion, garlic + carrot in oil until soft. 3๏ธโƒฃ Add curry powder + flour, cook 1 min. 4๏ธโƒฃ Slowly stir in stock, then add soy sauce + honey.
