What Niche Did You Focus on to Find Your First Client?

Can someone please explain to me how you position yourself or pick a niche to target, all i've been researching have already been handled by established name so my workflow skills are useless and the mid-small ones are never easy to find, the ones you find dont even respond to your emails or they'll tell u they're good when you call. How did you pick your niche and what niche do you believe has a screaming pain point but lesser solutions. I'm a consultant btw
