Who should I watch as a beginner to BJJ and who does good breakdown videos?

Good morning, I have a child student with Downs Syndrome, and I am looking for resources or ideas to help them. They are a fantastic student. they can follow direction really well, but they do have some limitations with mobility and flexibility. any help would be greatly appreciated!
