Garden 🪴
Finally got the starters planted and the ones I had to buy. What’s everyone else’s garden looking like? Excited for anything? We happened to find the peppers they use in Tabasco sauce and my oldest son and I are going to attempt to make some.

@Megan Noel my husband helped me thankfully, and here in a week or two I’ll need to transfer some of them, I used the containers I had but some are too small so we went and bought more 5 gallon buckets to hopefully help.

@Penny M oh no 😥 we tried to make a homemade greenhouse for all my plants last season, including my four year old lavender bush, welp being new we didn’t realize it has to get fresh air in and we killed them sealing them in I cried. Negative 5 where are you? Goodness that’s cold. 🥶 but to be fair I grew up in phx az so anything below 50 is me freezing 🥶
Tallow…
Hi Megan or any other homesteaders in the community….my husband just bought a huge bag of beef fat from our local butcher… he wants to make tallow…. I remember when I was young my mom would render the pork fat down for lard… she would do it in the oven on low heat… but for the tallow… we were told to cut it in small pieces and cook it on low on the stove and strain it … we want our own fat for cooking etc… Thank you for any responses…

Simple Quiche
Ingredients - 1 pie crust (store-bought or homemade) - 5 eggs - 1 cup milk or cream - 1 cup shredded cheese - 4–5 strips bacon, cooked and crumbled - ¼–½ onion, diced - Salt and pepper Instructions 1. Preheat your oven to 375°F (190°C). 2. Cook the bacon over medium heat until crispy. Remove and crumble. In the same pan, sauté the diced onion in a small amount of bacon fat until soft and lightly golden. 3. Mix the Eggs in a bowl, whisk togethe until fully combined. 4. Place your pie crust into a pie dish. Add: - Cooked bacon - Sautéed onions - Shredded cheese Pour the egg mixture evenly over the top 5. Bake for 35–45 minutes, or until the center is just set.(It should have a slight jiggle but not be liquid.) Notes - Do not overbake — this keeps the quiche soft and creamy - Easily adaptable — swap bacon for ham, add vegetables, or change the cheese - Great for using up what you already have in the fridge

Oh I love you so much for this!! Quiche is my favorite but never had a good recipe before!! Next week we’re having some quiche 🫶🏼
Gas Prices and Inflation
The price of gas is really getting out of hand in my opnion. I'm shocked us humans haven't figured something else out yet, I mean something that really works because EV'S are not the answer. So I know we have people from all over the world on here and I'm curious what gas prices are in your area. Here in BC Canada where I am, on the coast so close to Vancouver, the price just went from about $1.76 a liter to $2.13, the highest I've ever seen it. I'm also curious if this is affecting your day to day lives, like are you driving less or going out less because it's to expensive? Or car pooling more, stuff like that. And how bad is the rest of inflation in your area, food prices mostly because they're something we all have to buy. I guess I'm just curious if we're all feeling this in the whole world at the same time? I also would like to point out the fact that everyone here is on the right path weather your actively running a homestead, growing a garden, raising your own meat or just looking into it, at least your trying to do something to take care of yourself. Be the change I guess

@Hunter Hancock I’ve heard the islands and some remote areas of Alaska are like that with prices, but it’s still so wild to hear. Is the flooding effecting yall?
