Bread did not rise before baking
My bread looks like a French beret, long with a little puff. I found out that my oven cooks really hot at 450 degrees so I need to watch it more closely. I found my dough to be very sticky after rising, would it be better to put it in the refrigerator? My first try was not the best looking loaf but I gave it the old college try! I would love all the help and ideas you can give this beginner.

I’ve baked commercially, at home and done classes over the last 30 years. I get asked about bread still. So desire to make an online resource. I do lots of other things in addition to bread so think if I get my bread “up”, I can keep going with other things. I wanted to see what else is already around. I’m happy to share everything I have as a thank you. Bread traditionally was very secret, but in modern times, in order to keep the old skills we need to give them away!
