I would recommend 80% hands-on coding and 20% AI-assisting (percentages based on my personal experience). Once you master the foundations of a topic, no harm in using AI to assist you. In short, for learning stick to writing coding, reading docs, Stackoverflow/geeks4geeks, etc., and for more advanced engineers use AI to speed up your development.
