INGREDIENTS (Serves 4): 1 red onion, sliced 1 tsp. wholegrain mustard ½ lemon, zest & juice 8.4 oz. (240g) brown lentils, jarred, drained 1 cucumber, diced 7 oz. (200g) cherry tomatoes, quartered 1 yellow/red bell pepper, chopped 0.3 oz. (10g) fresh parsley, finely chopped 0.2 oz. (6g) fresh mint, finely chopped 1 avocado, flesh cubed INSTRUCTIONS (Cook & Prep Time - 30 Minutes): Place onion in an ice bath to mellow the flavor. In a small bowl, whisk 4 tbsp olive oil, mustard, 1 tsp. lemon juice, and ½ tsp. zest. Season with salt and pepper. In a large bowl, toss the vegetables and herbs with the dressing.
