Hi everyone
My name is Karen, I have been making cakes for around 14 years. Ive always been happy enough with my cakes and flowers but modelling people was just never going right for me. I have done Christina’s year long masterclass course and a few in person classes too. With her teaching I have come on leaps and bounds. Look at the first model I made 13 years ago and then the man I made on my last class. What a game changer.

I love making fondant cupcake toppers
Hi everyone, I started out intending to make wedding cakes, but what I've come to realise is that I really love making fondant cupcake toppers and I'm not a fan of the stress of wedding cakes! I do love making sugar flowers though, so want to practice sugar flowers and fondant toppers more with you all.

Oh your buttercream flowers are beautiful
Sugar Paste
I have never used sugar paste. Question, are they edible or do they go dry like the modelling paste and therefore not to be eaten? I am looking at doing the Easter Bunny and need to know if this can be eaten by the grandchildren? This is very likely to be a stupid question.

If you’re covering a cake then fondant is why you need. I like to use Couture. It’s quite hard when you take it out the packet but it breaks down nice when you knead it. If you’re making a model then stick with modelling paste as fondant stays quite soft and the model can drop. Particularly if the room gets hot.
Cupcakes
I was asked to make 100 cupcakes ( forgot to take pics ) There was Biscoff White chocolate Lemon Red velvet Vanilla Chocolate Tried lots of recipes but Hummingbird cake cupcakes recipes saved the day . I am a bit of a find a good recipe bung the flavours in. So all of the above apart from Red velvet and Chocolate are hummingbird. Lady was happy and im not stressed anymore 🙂 Love to know wat your favourite cupcake recipes are
