Serves 2: Can easily be doubled or tripled to make for family or friends 8 oz. boneless sirloin steak (grass-fed), trimmed of all visible fat, thinly sliced into small bite sized strips. 2 Tbs olive oil mixture 1 clove of garlic, pressed 2 celery stalks, chopped 1 cup broccoli 4 oz. thinly sliced carrots 4 oz. sliced mushrooms 3 tbsp lemon juice Directions: Saute the beef in half of the oil with garlic until the beef is browned. Remove from skillet. Heat the residual oil in the skillet. Saute the broccoli, celery and carrots until tender about 4 minuets. Add the mushrooms and lemon juice. Stir-fry mixture for approximately 3 more minutes. Combine the vegetables with the meat. It’s packed with protein, full of colorful veggies, and makes enough for leftovers tomorrow.
