Hey Society — Wednesday's episode is hitting the burger debates head-on. You know the ones. Dimple or no dimple. Salt timing. Smash vs. thick. The "never press" rule that every griddle cook breaks. 80/20 or something else? Grill or griddle/flat top? Direct the whole time vs front sear vs reverse sear? Simple seasoning on the outsides vs custom rubs/marinades worked into the beef before shaping it into patties? Loosely hand roll patties or use a burger press (before cooking)? Use a grill press (while cooking) or not? When to flip and how often?

Tough! I selected Live Fire because that’s what I *want* to master, and I enjoy the process the most. But, until recently, 9/10 of my sessions are either low and slow or reverse sear.

@Real MeatStick they did a great job designing it. I love it. in the pic is an EFT.. I have an ACG.. they’re very similar… the EFT adds a pellets cooker to the right side… the ACG is coal/wood on both sides… otherwise they’re the same
Hey grill hey cookbook
While there's probably a lot of cookbooks out there I enjoy the fact that hey grill hey have included there rub recipes in the cookbooks. Does anyone else know of a YouTuber or restaurant that gives out there rub recipe?

Does anyone here source meat/produce from local farms? Please share Your experiences, especially as it compares to big grocery chains!

@Mike Sue nice to hear it has better flavor!! I am from NYC, but I’ve been in NC for 3 years. I’m late to make this move, but I am pretty sure I want to switch to buying meat/dairy/produce locally, and it’s possible here! Placed my first order today. Fingers crossed.

@Mike Sue i’ve visited a few times and I purchased some frozen meats. I found a few more farms online over the weekend. My plan is to try to find a good family-run farm
