Ingredients: 2 large chicken breasts, sliced 2–3 tablespoons jerk sauce (adjust to taste) 8 oz pasta (spaghetti, angel hair, or egg noodles) 1 cup cherry tomatoes, halved 1 bell pepper, sliced 2 cloves garlic, minced 2 tablespoons butter ½ cup shredded mozzarella 2 tablespoons goat cheese (optional but recommended) Salt & pepper to taste Fresh parsley (optional garnish) Instructions: Cook pasta according to package directions. Reserve ¼ cup of pasta water before draining. Season sliced chicken with jerk sauce. Marinate 15–30 minutes if possible (even 10 minutes helps!). In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Add chicken and cook 6–8 minutes until golden and fully cooked. Add bell peppers and cherry tomatoes. Cook until slightly softened but still vibrant. Reduce heat. Stir in cooked pasta and a splash of reserved pasta water. Add mozzarella and goat cheese. Stir until melted and lightly creamy. Taste and adjust seasoning. Garnish and serve warm.
