Loaf Not Doubling in 4 Hours
My starter, Frodough, has been doubling for days now, and is currently 18 days old. 6 hours ago, I started my first loaf, anticipating that it would double in the bowl within 4 hours, and I could pop it in the fridge as I went to bed. As you've likely already worked out, it hasn't doubled. The surface has smoothed, it's building gluten, and all seems fine, but I haven't seen any growth, and I'm not sure if I'm better off leaving it out to rise overnight (risking over-proofing), or if I should arrest the growth by putting it in the fridge, and seeing what happens. I searched around, but couldn't find anyone else here with similar problems that I could learn from. I know that whatever advice you have will come too late to help me, but I thought I'd ask so future first-timers might find the advice they need.

@Sandra Brenes Would it increase my chance of success if I took it out of the fridge sooner, giving it more time to warm and rise? It's 9:20AM now - I could take it out any time, and bake any time between now and 11PM.

@Sandra Brenes Thanks! I've watched all of your sourdough videos, but something that's not yet clear to me is temperature. You've commented about longer fermenting times of up to 72 hours, but I'm not sure if that's intended to be 4°C, or 20°C, or something else. What's the ideal temperature at different stages? If I turn on my stovetop light, the inside of my microwave (which sits over my range) get to 30°C, which is a nice warm place for something to sit, but I don't know if that's too warm, or just right. <image of my dough right now, cold from the fridge>

Hi all. My starter, Frodough, is 17 days old, and my first loaf of bread is currently a ball of rough dough, which has been resting for the last 2.5 hours. I'll pop it in the fridge before going to bed, and likely bake it tomorrow. As a disabled man, I've been searching for a way to bake that would minimize the energy required to manage the process, and still get a decent product. I think I've now found it. I'm on the west coast of Canada, near Vancouver. Sandra, thank you for the no BS videos that present practical info and offer guidance that leads to results. Much appreciated.
