What are we drinking today?
Today I'm sipping on an espresso tonic that I made yesterday, seeing how it holds up overnight. These are so fun to make and enjoy, all you need is some tonic water, and espresso!

It can be found in the classroom tab! Pretty light stuff, eventually I’ll have some videos I’ll upload as a resource in that very page. I encourage everyone and anyone to use it as a resource in their own coffee journey as regularly as they need to, even if they become an expert it’s still useful knowledge. On another note, I would love for this space to become something bigger than a school where I’m just flexing how smart I think I am, I want this to be a space where people who love their coffee can share their experiences, make recommendations, ask advice, and so much more! Happy New Year’s Eve!
Hope everyone’s holidays have been well! Mine haven’t gone as planned but we’re still drinking good coffee and remembering its all about progress, not perfection. Today I’ve got a pour over of a single origin from Huila Columbia, it’s a double ferment Pacamara roasted by NoComply Coffee. Notes of peach rings and canned pear are prominent. I also have a single origin dark roast from Ethiopia I’m pulling on espresso, makes a nostalgic latte reminds me of coffee shops pre tik tok lol.

I brewed something great on my Gucci new scale! My name is Matt, and I met Chris while I was on a layover at SDF. I’m an airline pilot so I hit up a lot of coffee spots throughout the country and Chris was by far the most enthusiastic and knowledgeable barista I’ve run into yet. Now, I always make it a point to stop by the downtown Lou Barista Parlor whenever I’m in town and bring some special beans so that we can play with them on his EK!
