Hi everybody! I've been making bread with fresh milled flour for about six months. It's the only bread I can eat, and I'm thrilled to be eating bread without reaction. I'm ready to add in sourdough to see if it helps my gut. My starter is going and I've made cornbread so far. Now to learn how to increase it to bake soft sandwich bread. Really I'd like to bake everything with sourdough! I'm from the Albany area of upstate NY.

@Terri Rosett 13 years is a long time to go without eating bread! I didn't post my cornbread. That was just before I joined last week. I will try to remember to post my sourdough creations from now on! How long have you been on the BBW? I have to figure out how to dial my bread and cookie eating back because I've put on five pounds after nearly three years of eating mostly carnivore, during which my energy tanked so much I was losing my will to do anything. But it was all I could find to eat without reaction. Fresh milled flour gave me my life and energy back! Except for the weight gain, the last thing I want is to restrict it, I'm so food restricted already. I have to make very basic breads as well. I'm hoping sourdough is another revelation in health. I'm happy to hear it's helped you!

@Sandra Brenes I've heard that I can feed them whatever leftover flour I have on hand, so that's what I've been doing. Mostly hard red, but also hard and soft white. My scratch starter has been exclusively fresh milled. I started it on 9/8. It now resting in the fridge. I started the culture one on 9/15. I've fed that one with a combination of fresh milled and King Arthur all purpose, so I'm not sure about actually baking with it. But I wanted to see how a starter would respond to different flours. I'm in the learning and experimenting phase!

@Terri Rosett What is your purpose for having two starters? I lost patience before the scratch one started to rise. I had a packet culture sitting around so I started that one two. As soon as I did the first one took off. Now the second has also taken off. I guess I'll have plenty! But I've been keeping them small so far.
