So yesterday we talked about dietsā¦and a month or so ago members were asking for recipes. Okay, yesterday we really talked about moving more and eating healthier š Which is great⦠until you want something warm, soft, and a little sweet. Thatās where this Banana Loaf from our Healthy Home Cooking collection comes in š Itās a Southern favorite...with a mindful twist. We swap some of the oil and butter with applesauce, so you still get that moist, cozy goodness⦠just a little lighter. Same comfort. Less guilt. More feel-good. Honestly, it smells like self-care while itās baking. š BANANA LOAF (Makes 2 loaves; serves 24) Ingredients 3 cups all purpose flour 1 teaspoon baking powder 1-1/4 teaspoons baking soda 1/4 teaspoon salt 1/2 teaspoon cinnamon 1 teaspoon nutmeg 2 eggs 1-1/2 cup sugar 2 teaspoons vanilla 5 ripe bananas 1/3 cup unsweetened applesauce 2 Tablespoons vegetable oil non-stick cooking spray 1 cup chopped walnuts - optional Directions 1. Preheat oven 350 degrees. 2. In a bowl sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg. 3. Beat eggs in a large separate bowl. 4. Add sugar, applesauce, oil, and vanilla to eggs. Mix well. 5. Add flour mixture to egg mixture. 6. Mash banana and add to the mix. Stir well. 7. Pour into 2 loaf pans (8-1/2 x 4-1/2/2x2-1/2-inch) coat- ed with non-stick cooking spray. 8. Bake at 350 degrees for 40-50 minutes. Cool in pan on rack for 3-5 minutes. Remove from pan and finish cooling.
