In wine, they add structure, texture, age-worthiness and create that dry, gripping mouthfeel.
🧪 The Tannin Test (No Lab Required)
Sip a bold red wine like a young Cabernet or Petite Sirah and notice:
Does your mouth feel dry or chalky?
Do your gums tingle or tighten?
Does it smooth out with food or stay sharp?
If that dryness feels bold but balanced, you probably enjoy high-tannin wines.
If it feels like you need a glass of water ASAP…
... You may want something gentler.
