Baked Salmon in Foil with Asparagus & Lemon Garlic Butter Sauce
Ingredients:
  • 2–4 salmon fillets (skin on or off, as preferred)
  • 2–3 cloves garlic, minced
  • 1 lemon, thinly sliced + 1–2 tbsp fresh lemon juice
  • 3–4 tbsp butter, sliced
  • 1 bunch fresh asparagus, ends trimmed
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Aluminum foil
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Lay out foil sheets (one per fillet) and place salmon in the center of each. Arrange asparagus around or under the salmon.
  • Top each fillet with minced garlic, lemon slices, and butter. Drizzle with lemon juice. Season with salt and pepper.
  • Fold the foil over the salmon and seal to create a packet.
  • Bake for 15–20 minutes, depending on thickness.
  • Optional: Open foil and broil for 2–3 minutes to get a slight golden top.
  • Garnish with chopped parsley and serve hot – straight from the foil for easy cleanup!
Tips:
  • Serve with rice, quinoa, or crusty bread to soak up that buttery lemon sauce.
  • You can prep these packets ahead for meal planning!
