Instructions
  1. Prep the Chicken: Pound chicken breasts to an even thickness (about ¼ inch). Season both sides with salt and pepper.
  2. Dredge and Bread: Set up three bowls—one with flour, another with beaten eggs and water, and the third with breadcrumbs mixed with Parmesan. Coat each chicken piece in flour, dip in egg, and finally coat with breadcrumbs.
  3. Fry the Chicken: In a skillet, heat oil over medium-high heat. Fry each chicken breast for about 3-4 minutes per side until golden brown. Place fried chicken on paper towels to drain excess oil.
  4. Bake: Preheat the oven to 400°F (200°C). Place the fried chicken on a baking sheet, spoon marinara sauce over each piece, and sprinkle mozzarella cheese on top. Bake for 10-15 minutes until the cheese is melted and bubbly.
