Ingredients
For the Chicken:
- 1 ½ pounds boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and black pepper to taste
- 1/2 teaspoon dried oregano
- 1/4 cup vegetable or canola oil
For the Marsala Sauce:
- 2 tbsp unsalted butter
- 8 oz white mushrooms, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup dry Marsala wine
- 1/2 cup chicken broth
- Optional: 1/4 cup heavy cream for a richer sauce
Instructions
- Prepare the Chicken: Pound chicken breasts to about 1/2 inch thick for even cooking. Dredge them in flour seasoned with salt, pepper, and oregano.
- Cook the Chicken: In a large skillet, heat oil over medium heat. Cook the chicken for about 4-5 minutes on each side until golden brown. Set aside.
- Make the Sauce: In the same skillet, add butter and sauté mushrooms until soft. Add garlic and cook for an additional minute. Pour in Marsala wine and chicken broth, allowing the mixture to simmer until slightly reduced. Stir in cream if desired for a richer finish.
- Combine and Serve: Add the chicken back into the pan, coating it in the sauce. Let it simmer for a few minutes until the chicken is fully cooked. Serve over pasta, mashed potatoes, or alongside a fresh salad.
This dish is fantastic with a side of fettuccine Alfredo for a full Olive Garden experience. For an added touch, garnish with chopped parsley and a sprinkle of Parmesan.
