Asian Cucumber Salad 🥒🥢✨
Ingredients
2 large cucumbers (or 4 small)
¼ red onion, very thinly sliced
1 tbsp sesame seeds
½ tsp black nigella seeds
1 tbsp sesame oil
1½ tbsp coconut aminos
1–2 tsp honey or agave (to taste)
Pinch of natural salt
Juice of ½–1 lime (to taste)
Method
Prepare the cucumbers
Slice thinly into rounds or half-moons. (Optional: lightly crush with the side of a knife for better flavour absorption.)
Soften the onion.
Add sliced red onion to a bowl with a squeeze of lime and a tiny pinch of salt.
Let sit 2–3 minutes to mellow the sharpness.
Make the dressingIn a small bowl mix:sesame oil + coconut aminos + honey/agave + lime juice + pinch salt.
Taste → adjust sweet / salty / tangy balance.
Combine Add cucumbers to the bowl with onion.
Pour dressing over and toss well.
Finish Sprinkle sesame seeds + nigella seeds.Let sit 5–10 minutes for flavours to absorb (best slightly marinated).
Optional additions (if you ever want variation)
Fresh chopped cilantro 🌿
Chili flakes or fresh chili 🌶️
Grated ginger
Thin carrot ribbons
Crushed garlic (very small amount)
