My philosophy
I'm neither a World Champion pastry chef nor a recipient of France's prestigious Meilleur Ouvrier de France award. I'm a woman from Toulouse, the home of the chocolatine, who left everything behind to open a French coffee shop in Playa Zancudo, a tiny village at the end of the world on Costa Rica's Pacific coast.
Here, between the ocean, the jungle, toucans, monkeys and crocodiles, I bake croissants, sourdough bread and French pastries in one of the country's wildest regions.
I share my everyday life without filters: pastry, coffee shop life, organization, successes, challenges, creativity, resourcefulness and entrepreneurship under the tropics.
I'm not going to teach you how to become a world champion pastry chef.
I'm going to show you how I built a coffee shop at the end of the world.
