My name is Iván Castrillón, and I’m the co-founder of La Huerta Hotel, a regenerative farm-to-table hotel located in the mountains of Colombia. For the past years, I’ve been deeply involved in soil regeneration, agroecology, and carbon-positive food systems, producing most of the food we serve for our guests.
I come from both worlds:🌱 20+ years in agronomy and soil chemistry,🏨 and now leading a regenerative tourism project that relies entirely on living soils to grow vegetables, fruits, mushrooms, and pasture-raised livestock.
I’m currently writing my master's thesis on how agroecology contributes to regenerative tourism, and I also share our processes on YouTube to educate people about soil, carbon cycles, and food sovereignty.
I joined this community to:
- learn from other practitioners of living soil systems,
- share what we’ve built at our hotel-farm,
- and connect with people who believe that healthy soil is the foundation of everything—food, climate, and community.
