"The olive harvest in Portugal happens in October/November and is an amazing thing to be around. In the countryside it’s very common for people to have olive trees and harvest them themselves. Often people will gather together to help each other harvest. It’s a very ancient and communal tradition.
Nets are placed beneath each tree and the branches are shaken, sometimes using special equipment. The fallen olives are then separated and collected by hand. It’s a slow, but happy process. Olive trees and groves can be very old and past down through generations. If the olives are harvested green when they are young, they are considered ‘virgin’ oil.
You get less oil from each olive, but it’s more valuable. Older, black olives are more juicy, but not considered ‘virgin’.
