If you’re baking the sourdough version, tonight is starter night. You want it ripe and peaking when you mix tomorrow, not sluggish and not collapsed. Feed it before you go to bed. If your kitchen runs cool, feed it a little earlier or bump the ratio down so it’s ready when you are.
If you’re doing Classic New York, Montreal, or Jalapeño Cheddar, you’ve got instant or active dry yeast doing the work and you can sleep in. All four recipes are live in the Recipe Pantry.
