Closing Down...
Sometimes... my heart gets ahead of my head. And my head ain't nothing to brag about. 😜 I spend most of my time answering phone calls and helping vendors. Most of my time is inside https://vendorsunited.com (my favorite place) - and I simply have not had time to devote as much time here... as it needs. I hope you can understand. I'll be shutting this down in a few days. You can still reach me by text at 865.446.0660 - Facebook - (inside VendorsUnited) & Youtube. Happy Happy Holidays & Much Love! ~ Ben

Sorry to see this platform go Ben. It’s been a great resource for help and advice. Plus it’s not Facebook 🤪 lol. You are a busy dude so I understand. I don’t know how you do it. Appreciate all you do for the industry. 🙌 Have a Happy Thanksgiving! 🦃🍁🍽
Chopped Onions
What type of onions are y’all using for chopped? White, yellow, sweet, Vidalia?
Pacific Northwest
Hi, Anyone from the Portland area able to recommend a meat wholesaler that sells Sabretts?? Too expensive to buy and ship from the east coast. Thanks!

You try Walmart? Out of all the wholesale clubs and online ordering, they were the cheapest. Look on their app, if they’re available sign up for Walmart+ - free delivery. I think they only sell skinless though. Even here in FL it’s challenging finding natural casing Sabrett that doesn’t cost a fortune.
Dirty Water Lab day
Experimenting with my dirty water & chili dog sauce flavor profiles. Not too shabby for my initial run 👌 Ingredients and results in the comments below 👇

Dog of choice: Sabrett skinless. Good size, hang out over the bun, stay firm, great taste. Dirty Water: about 3 cups of water, 2 tsp of Better than Bouillon, tsp onion powder, tsp cumin, 2 cloves garlic, 3-4 dashes Worcestershire. Bring to a boil, turn to low, throw in dogs. Let dogs sit 15-20 minutes. Result: Really tasty. Could have probably gone with one tsp bouillon, as evident in the picture. 2 tsp really darkened the water. Dogs tasted great, nice color, super firm. Chili sauce / canned - Castleberry: Didn’t have high hopes and it tasted as expected. I went for cheap because I knew I’d be doctoring it myself. It wasn’t good. Super pasty, heavy bean profile, not much meat profile. It does have beans listed as ingredients, but more of a paste texture than actual bean. Result: after adding my own ingredients it was better. Still wouldn’t serve it on a cart. Had to water it down with 1/2 cup water, onion powder, garlic powder, paprika, 1 tsp bullion, pepper, couple dashes of Worcestershire - edible. Buns of choice - Martins potato Mustard: Mikes Amazing Deli 👌 Dressed dogs: 1st - mustard, Onion sauce (Sabrett), Kraut, wrapped in foil, let sit for a couple minutes. Result: I like my dogs steamy when I eat them. They were perfect coming from the foil. A little messy, but delicious. Went a little too heavy on the onion sauce. That stuff can overpower all the other the flavors. Less is more. 2nd dog: Mustard, chili sauce, wrapped in foil. Result: super messy, very steamed, pretty tasty considering the crappy Castleberry chili. All in all pretty pleased with my first test run. Sabrett skinless will most likely be my go to on my cart. Taste great and look freaking awesome hanging out of the bun. Presentation. Chili sauce still a work in progress. May need to make my own but prefer canned with my own touch for ease of prep. Open to suggestions on doctored up chili sauce. Almost ready to pull the trigger on my cart, I’m all researched out lol.

@Bryan Pearce thanks Bryan! They were really good. I mixed it up today. Grilled in a pan, didn’t wrap the buns. Distinct difference in taste and texture. Dirty water, steamed buns is the clear winner 🥇

Do you have a demand for parents buying their kids basic dogs? Is the Oscar Meyer in addition to another dog brand you currently sell? I could see it working well for a family friendly type of event. Other than that I wouldn’t imagine there would be that large of a demand. Plus you open up the possibility of regular customers wanting the “cheap” dog and your better dogs going to waste. If it was me I’d avoid it.
