🥩Keto Meatloaf (with Carnivore Version)
🧠 Why it works - Protein that actually satisfies - Soft, steady energy (no carb rollercoaster) - Collagen to support tissue repair + calm the system - Easy meal prep — reheats beautifully This is “weekday nourishment meets cozy dinner table.” 🍴 Ingredients - 2 lbs ground beef (80/20) - 1 cup crushed pork rinds - 2–4 tbsp collagen peptides - 2 eggs - ¼ cup heavy cream or broth - ½ cup bacon bits - Sea salt, onion powder, garlic powder, pepper (optional) - Melted butter for the top (optional) - Unsweetened ketchup for those who want it (optional) [Carnivore version: Skip onion + spices, keep sea salt only..] 🔥 Method (quick) 1. Whisk eggs, cream, and collagen 2. Stir in pork rinds + bacon + seasonings 3. Rest 2–3 minutes to hydrate 4. Fold in beef gently 5. Shape, brush with butter 6. Bake at 350°F ~60 minutes (to 160°F) 7. Rest 10–15 minutes before slicing 8. Ketchup on half during the final 10 minutes if you wish 🍽 Serving ideas - Thin slices + soft scrambled eggs - Beside sautéed mushrooms or simple greens - Cold the next day with mustard or a swipe of aioli — incredible 💬 If you make this… Share a photo or a note below 👇 Curious how it lands for you, especially the collagen addition — it gives the most luxurious texture. Wishing you strength, nourishment, and steady energy today 🤍Excited to see your kitchen creations!

I will add in heavy Cream! I never thought to put it in meatloaf. I don't seem to do well with pork, however. I'm still looking for something I can add to the meatloaf to hold the moisture.
What's your menu today?
Hiya! 👋 Today for (early) lunch, I had a gorgeous, bone-in, nice-and-fatty pork chop, cooked in the air fryer, with a bit of butter and extra salt added on top before plating. Plain, cold mineral water to drink. Deeelish!! 😋 What are you having to eat and drink for your Carnivore journey today?

That sounds amazing. For breakfast I had a big mug of freshly cooked homemade bone broth with Carnivore Crisp Organ Flour mixed into it. Then for lunch I had a slab of meatloaf made with lots of butter and spices. For a few days I'm going to be really careful about weights and amounts of food to recalibrate my nutrition.

@Dr Emily Franklin Will do.
Day one reality check
Joining this group has inspired me to look more carefully into my "carnivore" diet that I have been doing now for 2 months. I have been way off, doing too much of everything, more fat than protein and too many carbs through dairy addictions with heavy creme and Kefir. I hope to find some support here for dropping the heavy creme, kefir, sour creme and occasional cheese.

Emily, what is a good homemade electrolyte mix? I have heard that potassium chloride powder combined with the Redmond Real Salt you recommended is good. Do I need the Potassium? Are there inexpensive ways to get enough trace minerals besides buying something like Concentrace?

Hi Lucy and Elizabeth, I've tried pretty much every diet out there to reduce irritation and inflammation with my Crohn's disease. The carnivore diet gives me hope as something that can work where the others have failed. I originally saw dairy as my transition to a meat only diet, but it's definitely become an addiction. Especially cheese! Today is my first day without any dairy and, so far so good. I'm not one of those people that does great with cold turkey, so I know I have to have a lot of patience and acceptance with myself as I wean off of the dairy. My friend met me at a job site this morning with a Dandy latte from O'horis with heavy cream, lol. It was really hard to say no! It's a really deep thing that we're doing, I think, going way beyond what food we put in our bodies.

So far I have to say that my favorite meal has been a really good roast seared on the stove in really hot butter and spices 'till it's nice and brown on all sides, then put in the pressure cooker with a cup or two of bone broth in the bottom plus a stick of butter, and cooked to tender perfection.

Hi, I'm 60, and semi-retired as a contractor. I was diagnosed with Crohn's in 2017, had a heart attack in 2024, and recently began a carnivore diet.
